Fenzheng Rou is a Shaanxi comfort food masterpiece. Thin slices of pork belly are marinated in soy sauce, ginger, and Shaoxing wine, then generously coated in a seasoned rice flour mixture made from toasted rice blended with star anise, cinnamon, and Sichuan peppercorns. The pork is then steamed for hours until the fat renders into the rice coating, creating a meltingly tender, aromatic, and slightly nutty dish. The rice flour absorbs all the meat juices while keeping the pork incredibly moist. Served on a bed of sweet potato or taro that soaks up the savory juices, it's pure home-cooked bliss.

📖 History

Fenzheng Rou has been part of Shaanxi home cooking for centuries. The technique of coating meat in rice flour and steaming was developed as a way to tenderize tougher cuts of meat and stretch ingredients. It became a festive dish served at banquets and family gatherings across the region.

Found in most traditional Shaanxi restaurants. Yongxingfang has several excellent versions. For the most homestyle taste, try it at Suwei Restaurant (苏味饭店) near the South Gate.
