Hu La Tang is Xi'an's legendary breakfast soup — a thick, starchy, intensely peppery concoction that wakes you up like nothing else. The deep brown broth is packed with silky tofu strips, glass noodles, sliced beef, wood ear mushrooms, and cilantro, all bound together in a silky, almost porridge-like consistency. The defining feature is its aggressive use of white pepper — providing a sharp, penetrating heat that's entirely different from Sichuan's numbing spice. Locals eat it with bread pieces torn in, or alongside a freshly baked flatbread for dipping.

📖 History

Hu La Tang was introduced to Xi'an by Hui (Chinese Muslim) communities along the Silk Road, incorporating pepper and spices brought by traders from Central Asia. It has been a Xi'an breakfast staple for centuries, believed to have warming and energizing properties that prepare laborers for long workdays.

🍝 Where to eat it:
Lao Liu Jia Hulatang (老六家胡辣汤) near Small Wild Goose Pagoda is legendary. Most Muslim Quarter eateries serve it only until 10 AM — this is strictly a breakfast dish. Arrive early!
