Guan Tang Bao

Guan Tang Bao are soup-filled steamed buns that require serious skill to make. A gelatin-rich broth is prepared from pork bones and chicken, then cooled into a solid jelly. This jelly is chopped and mixed with pork filling before being wrapped in an impossibly thin dumpling skin. As the bun steams, the jelly melts back into hot soup, creating a dumpling that releases a flood of savory liquid with every bite. The trick to eating them is gentle — nibble a small hole, blow to cool, sip the soup, then eat the rest dipped in black vinegar with ginger shreds.

📖 Histoire

Guan Tang Bao traces its origins to the Northern Song Dynasty (960-1127) in Kaifeng, but Xi'an's Muslim community perfected the technique. The dish spread along the Silk Road and Xi'an's version is considered among the best in China, with shops competing for the thinnest skin and richest broth.
