Guo Kui is Shaanxi's legendary flatbread — a thick, heavy disk of wheat dough baked in a traditional clay oven until the crust is rock-hard and golden. Legend says this bread was carried by soldiers of the Qin army as portable rations because it stays fresh for weeks. The secret is in the dough: low hydration, multiple folding and resting cycles, and a long, slow bake. The result is a bread with an intensely wheaty flavor, a dense chewy crumb, and a crust that shatters when you bite. It's eaten on its own, stuffed with braised meat (making it a Roujiamo base), or broken into soups.

Guo Kui was developed during the Qin Dynasty (221-206 BC) as military rations. The dense, dry bread could be carried for months without spoiling and was often worn around soldiers' necks like a shield. It became known as 'the soldier's bread' and remained a Shaanxi staple for over 2,000 years.
