Jiao Tuan is a traditional Shaanxi peasant dish that's become a beloved Xi'an comfort food. Cornmeal or buckwheat flour is slowly stirred into boiling water in one direction only — 'jiao' means 'stir' — until it forms a thick, smooth, almost jelly-like mass. The key is constant stirring in a single direction, which gives the dish its uniquely silky and cohesive texture. Served two ways: 'water jiao tuan' in a bowl of spicy-sour soup with vegetables, or 'dry jiao tuan' as a block cut into pieces and dipped in chili-vinegar sauce. Either way, it's humble, warming, and deeply satisfying.

Jiao Tuan originated in the Shaanxi countryside as a 'poor man's food' during lean harvests when wheat was scarce. Cornmeal and buckwheat were more affordable alternatives. The single-direction stirring technique became a cultural tradition — it's said that stirring both ways brings bad luck.
