Steamed Wuchang Bream is Wuhan's signature fish dish. The fish is simply steamed with slivers of ginger and spring onions, then drizzled with hot oil and light soy sauce. The flesh is flaky, tender, and subtly sweet. Chairman Mao famously praised this dish in his poetry.
Wuchang bream from Liangzi Lake near Wuhan has been harvested for over a thousand years. The dish gained national fame after Mao Zedong visited in 1956 and wrote a poem mentioning it.
