Yangrou Paomo is the undisputed king of Xi'an cuisine. It starts with a bubbling cauldron of lamb bone broth, simmered for hours with star anise, cinnamon, and ginger until deeply fragrant. Diners are given a flatbread (mo) and must tear it into tiny bite-sized pieces by hand — the smaller the pieces, the more respect you show to the chef. The bread is then returned to the kitchen, where it's topped with sliced lamb, vermicelli, and the boiling broth. Served with pickled garlic and chili sauce on the side, every spoonful is a taste of Xi'an's 3,000-year history as the Silk Road's greatest culinary crossroads.

📖 역사

Yangrou Paomo dates back over 1,000 years to the Song Dynasty. Legend says a starving scholar used his last piece of bread to wipe clean a hot lamb soup pot, accidentally inventing the dish. It became the signature food of Xi'an's Muslim community and remains the city's most beloved comfort food.

🍝 어디서 먹을까:
Lao Sun Jia (老孙家) near the Bell Tower is the most famous. Yi Pin Feng (一品香) in the Muslim Quarter is also legendary. For the authentic DIY experience, any paomo shop on Beiyuanmen Street serves excellent versions.
