Lu Zhu Huo Shao

Lu Zhu Huo Shao is Beijing's most beloved working-class meal. Slices of pork lung, large intestine, and firm tofu swim in a deeply flavored soy-based broth that has been simmering for hours, sometimes days. Chunks of huoshao (baked flatbread) are added to soak up the broth. The dish is served with garlic paste, chili oil, and chopped cilantro. It's rich, savory, and intensely satisfying — the taste of Old Beijing in a bowl.

📖 History

Created during the Qing Dynasty as an affordable meal for laborers. It evolved from Suanzao Gao, a Ming Dynasty court dish. The current version has been sold on Beijing streets for over 200 years.

🍝 Where to eat it:
Xiao Chen Lu Zhu (小肠陈) is the most famous chain, with multiple locations. The original stall near Qianmen (Front Gate) is legendary.
