Zha Jiang Mian is the quintessential Beijing home-cooked meal. Thick, chewy hand-pulled noodles are served with a rich sauce made from fried minced pork and huangjiang (fermented soybean paste). The sauce is dark, savory, and intensely umami. It's topped with fresh shredded vegetables — cucumber, radish, bean sprouts, and edamame — that add crunch and freshness. Each diner mixes their own bowl, adjusting the amount of sauce to their taste.
Originated in Shandong but adopted and perfected in Beijing over centuries. It became a staple of Beijing home cooking during the Qing Dynasty.
