Changsha Stinky Tofu is the city's most famous street food — and its most misunderstood. The tofu is fermented in a brine of milk, vegetables, and seasonings for months, developing a strong, distinctive odor. It's then deep-fried until the outside is jet black and incredibly crispy, while the inside remains soft and custard-like. Served with a sauce of chili oil, garlic, soy sauce, and pickled vegetables, it's one of those foods that smells terrible but tastes amazing. The locals say: 'It smells foul, but it tastes fragrant.'
Stinky tofu has been eaten in China for over 1,000 years. Changsha's version — black and extra crispy — became famous in the 1950s through street vendors at Huogongdian.
