Egg Puff Cake is the ultimate Chengdu street snack. Small round pancakes are cooked in brass pans over charcoal, developing a thin, crispy golden edge while remaining soft and fluffy in the center. They're folded over a filling — options range from sweet (red bean paste, chocolate, condensed milk) to savory (pickled vegetables, shredded pork, cheese). It's cheap, quick, and infinitely customizable.

📖 History

Originally a Qing Dynasty snack from Sichuan, egg puff cakes were traditionally made in small brass pans. Street vendors still use the same pans today, passing the technique down through generations.

🍽 Where to eat it:
Jinli Ancient Street has dozens of vendors. Ask for 'dan hong gao' and choose your filling. Chengdu's primary school gates are also famous for having the best vendors.
