Unlike Northern Chinese dumplings served with vinegar, Zhong Shui Jiao is defined by its sauce — a complex blend of chili oil, soy sauce, sugar, and garlic. The dumplings themselves are small, crescent-shaped, with a thin wrapper and a filling of seasoned pork. They're served in a pool of the glossy red-brown sauce, sprinkled with scallions.
Invented by a man named Zhong in 1893 at his Chengdu noodle stall. The recipe has been passed down through generations.
