Hot Dry Noodles are to Wuhan what pizza is to Naples. Alkaline wheat noodles are boiled, drained, then tossed in a thick sauce of sesame paste, soy sauce, chili oil, and pickled vegetables. The noodles are chewy, the sauce is nutty and aromatic. A bowl costs just a few yuan and fuels the city through their morning commute.
Created in the 1920s by street vendor Li Bao at Hankou's Changdi Street. He accidentally dropped sesame oil into the noodle pot and discovered the combination was delicious.
