Qishan Saozi Mian

Saozi Mian is a Shaanxi province treasure from the town of Qishan near Xi'an. The dish features thin, tender noodles bathed in a tangy, spicy broth colored a deep golden-red from chili oil and dark vinegar. The 'saozi' topping is a stir-fried mixture of minced pork, tofu, carrots, black fungus, and leeks. What makes it distinctive is the pronounced sourness — Shaanxi black vinegar takes center stage, creating addictive tangy broth that keeps you coming back for more. Traditionally served at festive occasions, it represents happiness and abundance.

📖 Historia

Saozi Mian has been made in the Qishan region for over 3,000 years. According to legend, it was created during the Zhou Dynasty when a scholar's wife invented the saozi (minced topping) as a way to extend expensive meat. The dish became a staple at weddings and New Year celebrations across Shaanxi province.

Qishan Saozi Mian is found at Haoji (郝记) near Yongxingfang. In the Muslim Quarter, De Fa Chang (德发长) serves a good version. For the authentic Qishan taste, look for shops advertising 'Qishan Saozi Mian' with yellow banners.
