San Bu Zhan is simplicity elevated to art. Just three ingredients — egg yolks, sugar, and starch — are stirred continuously in a wok over low heat for 20-30 minutes until the mixture transforms into a silky, golden-yellow, spreadable cream. The name means 'three non-sticks': it doesn't stick to the plate, doesn't stick to chopsticks, and doesn't stick to teeth. The texture is incredibly smooth, the flavor is pure egg custard sweetness. Making it requires extraordinary wrist strength and patience.

📖 History

This dish was created by chefs at the Qing Dynasty imperial court. It was originally called 'golden jade cream' and was a favorite of Empress Dowager Cixi.

🍝 Where to eat it:
Fangshan Restaurant (仿膳) in Beihai Park serves the most authentic version. Tong He Ju (同和居) is another famous specialist.
