Tang Er Duo means 'sugar ears' — named for their twisted, ear-like shape. These pastries are made from a fermented dough that's twisted into distinctive ear shapes, deep-fried until golden, then soaked in a fragrant malt sugar syrup. The result is intensely sweet, sticky, and chewy, with a caramelized crust and soft interior. The sugar syrup is often flavored with osmanthus flowers, adding a delicate floral note to the sweetness.
A traditional Beijing snack from the Qing Dynasty, Tang Er Duo was a favorite of the imperial court. It's still made by hand in traditional bakeries.
