Wan Dou Huang is an elegant Beijing dessert that looks simple but requires skill. Dried yellow peas are soaked, skinned, steamed, and strained into a fine paste, then sweetened and chilled until firm. The result is a smooth, jiggly, pale yellow block with a delicate sweetness and subtle pea flavor. It's cut into diamond shapes and served cold, often garnished with a dried jujube or osmanthus. The texture is silky, almost like a firm panna cotta.
Originally a spring and summer imperial palace dessert during the Qing Dynasty. It later spread to the common people and became a Beijing snack staple.
