Changsha Rice Noodles are the city's most important breakfast. Unlike the wide, thick rice noodles of Guangzhou (cheung fun), Changsha's rice noodles are round, thin, and silky — closer in texture to Vietnamese pho. They're served in a clear, deeply savory pork bone broth and topped with minced pork, pickled long beans, chopped peanuts, and a spoonful of chili oil. The toppings are key: pickled vegetables add tang, peanuts add crunch, and chili oil adds heat. Each diner customizes their bowl at the condiment station.
Rice noodles came to Changsha from neighboring Jiangxi province in the early 1900s. Changsha adapted them with local toppings and a preference for thinner noodles.
