Deyuan Baozi are legendary in Changsha — the city's most famous breakfast bun. These are no ordinary baozi: they're oversized, with a cloud-soft, pillowy dough and a generous filling of seasoned pork with a rich, gelatinous broth that turns liquid when steamed. The dough is slightly sweet, the filling is savory and juicy. The most famous version is the 'three fresh' (san xian) filling — pork, shrimp, and mushrooms. A single bun is substantial enough for a meal, and locals line up for them every morning.
Deyuan (Virtue Garden) restaurant was founded in Changsha in 1906. Its buns became so famous that 'Deyuan Baozi' is now a generic term for high-quality Changsha-style steamed buns.
