Liuyang Steamed Dishes come from Liuyang, a county-level city near Changsha. The technique is simple: fresh ingredients — pork ribs, fish, eggplant, eggs, or vegetables — are seasoned with chilies, fermented black beans, garlic, and oil, then steamed in small individual clay bowls over high heat. Steaming preserves the natural flavors and nutrients while the chilies and black beans penetrate every bite. Liuyang has a 500-year tradition of steaming food, dating back to the Ming Dynasty. The small-bowl technique was developed by farmers who would steam their entire meal in one pot.
