Tangyou Baba

Tangyou Baba is Changsha's most beloved sweet snack. Small balls of glutinous rice flour are first boiled until tender, then deep-fried until golden and crispy on the outside. They're immediately tossed in a bubbling syrup of rock sugar and osmanthus until each ball is coated in a glassy, caramelized shell. The result is a magical contrast — a shatteringly crisp exterior that gives way to an impossibly chewy, sticky interior. They're served hot on a skewer, burning your fingers and your tongue in the best possible way.

📖 History

Tangyou Baba has been sold on Changsha streets for over a century. It was originally a festive food for the Lantern Festival but became a year-round street snack.
