White Cut Chicken is deceptively simple but brutally difficult to perfect. A whole chicken is gently poached in barely-simmering water until just cooked, with the bones still slightly pink near the joint. It's then plunged into ice water to firm up the skin, giving it a uniquely bouncy, jelly-like texture. Served at room temperature with a dipping sauce of finely minced ginger, scallions, and hot oil. The purity of the dish means everything depends on the quality of the chicken — free-range birds with flavorful meat and thin skin are essential.

📖 History

This dish emerged from Guangzhou's farmhouse cooking tradition. The poaching technique was refined by Cantonese chefs who prized the natural flavor of high-quality free-range chickens over heavy seasoning.
