Wonton Noodles is Guangzhou's quintessential comfort food. Thin, alkaline egg noodles (made with a unique formula that gives them their signature springy texture) are served in a clear, amber broth made from dried flounder, pork bones, and shrimp shells. The wontons are filled with whole shrimp and minced pork wrapped in impossibly thin skins. The Cantonese obsession with texture is on full display — the noodles should be springy (yau yat tin), the wontons plump, and the broth light but deeply savory.
Wonton noodles arrived in Guangzhou with northern migrants in the early 20th century. Cantonese chefs adapted the recipe, adding shrimp and creating the distinctive thin-skinned wonton that defined the Guangzhou style.
