Today's version is a lavish bowl: silky rice congee loaded with sliced fish, squid, shredded chicken, fried peanuts, scallions, ginger, and crispy fried dough sticks (youtiao). Originated in the 19th century when boat vendors on the Pearl River sold congee to passengers arriving at Guangzhou's docks. Each boat had its own recipe, creating a thriving floating food culture.
