Cantonese congee is unlike any other rice porridge in China. The rice is cooked for hours until it breaks down completely, resulting in a silky, almost velvety texture. The toppings are where the magic happens: century egg and lean pork (皮蛋瘦肉粥), fish fillets (鱼片粥), chicken and ginger (鸡粥), or beef and egg (牛肉蛋粥). It's typically eaten for breakfast with fried dough sticks (油条) on the side. In Guangzhou, a bowl of perfectly smooth congee is considered a restorative tonic.
